What’s for Dinner This Week – April 26

Okay, here’s what we’re going to have for dinner this week – April 26.

 

We’ve been out of town, so I didn’t get this blog out like I should have. Since we were leaving town Mick thought it would be nice to eat dinner out last Thursday instead of cook, so I still have my baked Ziti I didn’t make from last week.

Here’s what we’re going to have this week:

Ground beef tacos

Chicken Tortilla/Noodle Soup

Baked Ziti

Orange Chicken and Coconut Fried Rice

BBQ Pork Chops

 

Ground Beef Tacos – When we get home from a trip, we always have ground beef tacos, otherwise in our house known as hamburger meat tacos. We don’t have any beans, rice or anything just a TACO PARTY!  When you go out of state, they really don’t have good Mexican food anywhere, so that’s the first thing we have to have.  This time it’s OLD SCHOOL just like Mick’s mom made. Ground beef cooked and seasoned with salt and pepper, (garlic and season salt).  Corn Tortillas fried in vegetable oil.  Grated cheddar cheese, lettuce and diced tomato.  Taco sauce and Salsa.  Our welcome home comfort food.

Chicken Soup – We bought a chicken to throw in the crock-pot. I just don’t know yet if it’s going to be chicken tortilla soup or chicken noodle soup. I haven’t made that determination, but I’m going to just put a chicken in the crock-pot, cook it down with some mirepoix, some herbs, make a beautiful broth, and shredded chicken. I will decide later.

Barbecue pork chops – Mick usually likes to have a sweet potato with it. So I’m assuming we’re going to get some really fat bone-in barbecue pork chops and he will throw them on the grill. If I can, I will marinate them overnight in apple cider, not apple cider vinegar. It just makes a wonderful, wonderful flavor. And then usually we have wild rice with that. So then we’ll need something green. A little salad, or we’ll pick some sort of green vegetable. I haven’t decided that yet either.

Orange Chicken – Okay, for the orange chicken, I’m a big fat cheater and I bought it at Trader Joe’s. You take the frozen chicken, and then you put it in the oven and gets it crispy, then you toss it in the Orange sauce, and it’s actually very good. And then fried rice with it. I’ll put some rice in the rice steamer with coconut milk and stock instead of water because I like it that way. Add some garlic, some ginger, and then I cook the rice and then after it’s cooked I’ll fry it up with an egg, and some soy sauce, and throw some vegetables in it. And that will be all our vegetables. So I’ll probably put in a little carrot, a little mushroom. Maybe water chestnuts.  I’ll heat up some frozen egg rolls for fun.

That’s five dinners, ground beef tacos, chicken soup, baked ziti, orange chicken with fried rice, and barbecued pork chops.  Yay, we have a plan.  Next week lets clean out the freezer.  Who knows what hidden treasures are hiding in there!
