The Famous Lemon Cake Recipe
I am hesitant to share this recipe because making it makes me feel special. I have never had anyone else I know make this and it’s a big hit whenever I take it to anyone’s house or make it for a party. I always have the ingredients handy so I can make it in a foil pan and take it anywhere. I always have a dessert in my back pocket.
Please note that I use a lemon cake mix not yellow, (why not have that extra lemony-ness?) AND buy Lemon Jello not lemon pudding made by Jello. (Mick!)
I think the recipe came from Aunt Janet’s cousin Virginia. Thank your Virginia, if it was you, for all of the adulation I have received over the years.
I felt very guilty keeping this luscious secret all to myself, now you have it, and I can sleep at night.

P.S. I made it as a cupcake, added some lime juice with the lemon juice for glaze. A little lime zest in the batter. I put whipped cream (with gelatin) on top with a lime slice coated in sugar, and called it lemon-lime cupcakes. You can see the glaze under the whipped cream. What I can do with a boxed cake mix!
