AKA Chicken Tortilla Casserole
There are a million different versions of this recipe but this is the best! This recipe came from a Relief Society LDS Cookbook that my Mom bought me 44 years ago. An old roommate saw it and made it for a girl’s night and it has been tradition for gatherings ever since.
I have slightly modified it over the years. I only use 1 Tablespoon of Bullion and I don’t put in the onions. I use Pace Picante for the salsa. I don’t cook a whole chicken, this is the recipe I use for leftover roast chicken along with leftover corn tortillas from taco night.
I think I have made this recipe 300 times, really! It is perfect to prep then freeze until later. With this recipe, I can make two round or square casserole dishes. Each will comfortably feed 4 with a lunch leftover.
