Having Company for Breakfast?

Make the perfect quick breakfast “quiche” that looks fancy but it’s easy.

My husband and I were discussing Thanksgiving morning breakfast and he reminded me of this easy dish.  I took it off of the side of a Bisquick box years ago.  It’s still there on the box (in one of its versions) for all I know.

It’s not a quiche but we always called it that.  I have made this a million different ways. I serve it with fried potatoes, a meat, fruit and a sweet roll or pastry and toast.  This dish takes the place of eggs and spares me balancing the task of preparing eggs for guests. It looks good on a plate.

I always ditch the raw onions called for in the recipe unless I have some already cooked onions.  I have added bits of cooked peppers and onions with ham with swiss to go Denver style.  I have made it with spinach and mushrooms and feta, I have made it with bacon and cheddar topped with avocado.  You can make with any variation, you just always need a cheese, 2 – Eggs, ½ cups bisquick, a cup of milk and some salt and pepper.  Mix it in a bowl and pour it in a baking dish.

You can reheat the leftovers for the next day.  This is way easier than those overnight soaking egg dishes to me.  Try it it’s super good!  Perfect for holiday company.
