Easy Day Halibut – a Recipe

A million years ago, I had an office, and a man came selling books…

He had a giant bag of heavy books. He had this book called the Encyclopedia of Creative Cooking. And I don’t know why, but for some reason, I bought it.  This book is so heavy you can’t lift it with one hand. I probably paid $10 or $20 for it. 

I opened it up and found this recipe for something that I thought was called Easy Day Halibut. But it was actually called Busy Day Halibut. This recipe was so simple, and you cannot lose with it. So, if you’re inviting a bunch of people over and you want to impress them make this.  It’s a beautiful meal, because you can’t screw it up, and it is so darn good.

So basically, this is what it is. You take Lipton Onion Soup Mix and sour cream, just like you’re making the dip. Then you take seasoned Italian breadcrumbs and Kraft Parmesan Cheese and mix it up 50/50.

Then you wash the fish and dry it off, I like Alaskan halibut, because it’s really thick. And then you coat the fish with the sour cream and onion dip mixture. And then you coat it with the bread crumb mixture.

You put it in a glass pan, that you put a little oil on the bottom or a little Pam, and then you dot it with butter, and bake it in the oven.
I bake this at 400 for about 20 minutes, (even though the actual recipe calls for hotter). And then it’s perfect. Then serve it and impress everybody. That’s it, so simple.

Now you know one way to cook fish! It’s just amazingly delicious. I cannot emphasize enough. I’ve been making it for years.

One thing, I mix up the normal amount of Lipton Soup Mix and sour cream as if I was making dip. And then I put about half of it away, so my husband can have dip later. Don’t put it all in the bowl, rub the fish on it, and think you’re going to eat it later because then you’ll have creepy germs.  EEEEKKKKK, fish germs!

Buy fresh or frozen halibut, but make sure it’s Alaskan. If you can stick it by your nose and you can smell it, it’s not fresh. Try and find a real fish store to buy it.  It’s very expensive. Just so you know, in the picture, that much fish cost a hundred dollars. I know you probably had to sit down in your chair, but it’s going to make two separate dinners. So, if you think, “Okay, that’s $50 to feed three people a gourmet dinner.” Nowadays, you can’t feed three people out at a nice restaurant for $50.

Just a side note:  We are in California and fish is expensive. We are paying $40 a pound and the fisherman are getting $7.  How are they getting it down here, FedEx overnight? But I digress.
