My beautiful Italian friend had us over for dinner one night and she made this dish.
It was one of the best things I ever ate. So delicate and light, but flavorful. The simplicity of the preparation makes the list for those ‘easy dinner nights.” It serves well for your meatless dinner nights and its plain enough for your picky eaters. The perfect meal. Plus, it tastes like you are eating it in a sidewalk café in Italy.
Molto Buona
Ready for the oven
Preheat oven to 375 degrees. Put an even layer of about two packages of cherry tomatoes in a glass pan with about 8 peeled cloves of garlic. Sprinkle sea salt, about two teaspoons, and about a 1/4 teaspoon of red pepper chili flakes. Toss it all generously with olive oil until coated.
Roast until the tomatoes are blistered
About 20 minutes.
Smash up the garlic with a fork
It should be nice and buttery.
Smash up the rest
I pull out some of the skins that haven't dissolved. You can always put it all in a blender but I am lazy.
Add the pasta and top with....
Pick your favorite noodle and cook. I add 1/2 cup of the pasta water to the sauce. I stir it all up and top with fresh basil and parmesan cheese. Now I have to make this again!
