Ceasar Chicken – a Recipe

So, let me tell you a funny story about one of my best recipes. Plus, I wanted to share this recipe with you called Caesar Chicken.

What you do is you take some Caesar salad croutons and grind them up, and mix it with Kraft Parmesan Cheese. You then use that as your breading. Take Caesar salad dressing, pour in a bag or bowl and you put chicken pieces in it. In this case, I use boneless white meat chicken. You toss it, bread it and cook it in the oven. And it’s perfect.

My sister-in-law uses this recipe all the time for chicken fingers or nuggets for her kids. Remember the sister that will make nothing if it has over 3 ingredients?  Well this one is for her, only 3 ingredients.

So, last week I thought I’d make some of these delectable chicken pieces. I make double, and then I freeze the rest, and then use it for chicken parmesan later. It’s the perfect chicken parmesan because you don’t have to fry it, you bake it in the oven.  Yay!

So, I send my husband to the store to buy Caesar salad croutons. And then I make Cesar Chicken for dinner and I take pictures. As I am making it I take out the Italian breadcrumbs. I don’t know what I was thinking! The whole point of the Caesar Chicken, is that you use Caesar salad croutons and Caesar salad dressing! The croutons are already perfectly seasoned and have and oil in them. I don’t realize my mistake, and I make the whole thing with the wrong ingredient. We eat it, it tastes fine, freeze the extras. Life is good.

I go in the cupboard the next day and see the package of Caesar salad croutons and I go, “Oh, my goodness. I can’t even believe I forgot.”  Well, that’s not what I really said.

I’m mad at myself because Caesar salad croutons are really fun to use. It makes some beautiful breadcrumbs, toppings for casseroles, or use to add to some stuffing. Keep it in mind for later inventions  because it adds great flavor.

Now, I’m sharing this recipe the way you SHOULD make it. Mind you, if you don’t, it still tastes good. Well, it tasted good enough that I forgot to notice.

Here’s my recipe: Take a package of boneless chicken breasts, soak it in the Caesar salad dressing to coat, maybe for an hour, (or not). I’d say a couple cups of the Caesar salad croutons ground up OR Italian breadcrumbs, and then maybe one cup of Kraft parmesan cheese. And then I do dot it with butter before I put in the oven. I cook it at 375 or 400 for about 20-25 minutes. And if it’s 400, it’s probably 20 minutes. And it’s the perfect dinner. You could make it with rice or potatoes. In this case, I made it with a nice noodle with a little cream and parmesan and parsley on it. And then I did a sautéed mushroom and zucchini. Lovely little dinner.

Oh well, my man was happy and we are looking forward to using those croutons soon!  Try this next time you are in the mood for a flavor boost!
